Strawberry Coconut Popsicles


With the temperatures reaching into the 100's here in Utah this week we've had to find a variety of ways to cool down. Besides swimming and running through the sprinkles we've also eaten a lot of popsicles. 

Here's a popsicle that's full of flavor and healthy as well. We used strawberries and blueberries, but you could combine any kind of berries you'd like to create a yummy and cool treat.

Strawberry Coconut Popsicles

1 cup strawberries
1 cup blueberries
1 1/2 cups coconut milk
2 cups water
1 cup apple juice
1/2 cup honey

Combine all the ingredients in a blender. Blend until smooth. Pour mixture into popsicles molds or 5 oz. Dixie cups, filling 2/3 of the way. Freeze for 30 minutes, insert sticks and continue to chill until the popsicles are fully frozen (2 hours or more). Enjoy!!

*Frozen berries work for this recipe also.
